He noticed "pork skin salad" on the menu once and ever since then, we've ordered it almost every time.
It's not much of a salad though... aside from it coming with lettuce. Those leaves are just vessels to scoop up the pork skin.
Crunchy and lime-tangy, this stuff is also excellent over rice...
Man, if ever there was a dish to have with a groovy little vino, this is the one . . . once Dustin has smashed his opponent into submission, grab a 2010 or 2011 Aussie 'dry' riesling [full of lime and citrus notes, low alcohol and crisp, zingy and light] and try a celebratory glass with that dish . . . it'll blow your mind Nelson !!!!
